Job Description: The Cook 1 – Signature (Fine Dining) role is a critical culinary position within Walt Disney World®’s premier dining experiences. This role requires advanced culinary proficiency, a deep understanding of classical and modern techniques, and the ability to execute consistently at a high level in fast-paced, high-volume Signature kitchens. Candidates must demonstrate leadership readiness, precision, and a commitment to culinary excellence.

Responsibilities: • Execute advanced culinary techniques, including emulsification, reduction, butchery, and a la minute cooking • Prepare and plate dishes to Signature-level presentation standards, ensuring visual appeal, portion accuracy, and flavor balance • Maintain strict adherence to HACCP protocols, including time/temperature controls, cross-contamination prevention, and allergen awareness • Operate and maintain specialized kitchen equipment such as immersion circulators (sous vide), combi ovens, cryovac machines, dehydrators, and planchas • Collaborate with Sous Chefs and peers to ensure station readiness, mise en place accuracy, and service flow efficiency • Support dietary accommodations (e.g., gluten-free, vegan, allergy-sensitive) with precision and care • Uphold Disney’s Five Keys and Signature service standards through every guest interaction and plate served

Basic Qualifications: • Minimum 2 years recent experience in a high-volume, full-service kitchen (grill, sauté, or hot line), or 1 year with accredited culinary certification • Proficient in knife handling, station setup, and execution across multiple line stations • Demonstrated experience with classical techniques (e.g., roasting, braising, poaching, saucier work) and modern applications (e.g., molecular garnishes, sous vide) • Working knowledge of butchery and seafood fabrication, including yield optimization and waste reduction • Strong understanding of flavor development, seasoning, and ingredient pairings • Ability to work collaboratively in a team-driven, high-pressure environment while maintaining focus and quality
