The Stewarding Supervisor is responsible for overseeing the daily operations of the stewarding department, ensuring the highest standards of cleanliness, hygiene, and sanitation across kitchens, restaurants, and back-of-house areas. The role supervises stewarding colleagues, manages cleaning schedules, maintains kitchen equipment and utensils, ensures compliance with food safety and health regulations, coordinates with culinary and food & beverage teams, and supports efficient kitchen operations while upholding the luxury service standards of Raffles and Fairmont.
Key Responsibilities:
Supervise and coordinate daily stewarding operationsEnsure cleanliness and sanitation of kitchens, restaurants, and back-of-house areasOversee the cleaning and storage of kitchen equipment, utensils, and tablewareMonitor compliance with food safety, hygiene, and health regulationsSchedule and assign tasks to stewarding team membersTrain, coach, and evaluate stewarding staffMaintain inventory of cleaning supplies and stewarding equipmentCoordinate with culinary and food and beverage teams to support operationsEnsure proper waste management and recycling proceduresReport equipment maintenance issues and follow up on repairsMonitor productivity and maintain high operational standardsEnforce workplace safety policies and procedures What will you bring to this role?
Diploma or bachelor's degree in Hospitality Management or a related field preferredPrevious experience in stewarding or kitchen operations, with supervisory experience preferredKnowledge of food safety, hygiene, and sanitation standardsFamiliarity with HACCP principles and health regulationsStrong leadership and team management skillsExcellent communication and interpersonal skillsGood organizational and time management abilitiesAbility to work in a fast-paced, multicultural environmentBasic computer skills, including Microsoft OfficeFlexibility to work shifts, weekends, and public holidays
