We are seeking a talented and passionate Specialty Chef - South Indian to join our culinary team in Chennai, India. In this role, you will be the driving force behind our authentic South Indian cuisine offerings, bringing traditional flavors and innovative techniques to create memorable dining experiences. Prepare and cook authentic South Indian dishes using traditional and contemporary cooking techniquesDevelop and customize menus that showcase regional specialties while accommodating seasonal ingredients and organizational objectivesOversee kitchen operations, ensuring compliance with food safety regulations, hygiene standards, and sanitation protocolsManage food inventory, control costs, and optimize ingredient sourcing from local and regional suppliersTrain, mentor, and supervise kitchen staff to maintain consistent quality and operational efficiencyMaintain precise plating standards and presentation techniques to ensure every dish meets organizational quality benchmarksCollaborate with front-of-house staff to understand customer preferences and gather feedback for continuous improvementMonitor and evaluate food preparation processes, making adjustments to enhance flavor profiles and nutritional valueMaintain detailed records of recipes, cooking procedures, and food safety documentationStay current with culinary trends while preserving the authenticity of South Indian cooking traditions Proven expertise in South Indian cuisine with deep knowledge of traditional recipes, cooking methods, and regional ingredientsMinimum 5 years of professional cooking experience, with at least 3 years specializing in South Indian culinary traditionsStrong understanding of food safety regulations, hygiene standards, and sanitation best practicesDemonstrated ability to manage kitchen operations, including inventory control and cost managementProficiency with kitchen equipment and modern cooking technologiesExcellent leadership and team management skills with experience training and mentoring kitchen staffStrong attention to detail with a commitment to consistency and quality in food preparation and presentationAbility to work in fast-paced environments while maintaining composure and organizational skillsKnowledge of ingredient sourcing and supplier relationships within the Chennai regionExcellent communication and interpersonal skills to collaborate effectively with team members and managementPreferred: Food safety certification or culinary training from recognized institutionsPreferred: Experience in high-volume food service operations or fine dining establishmentsPreferred: Experience developing and implementing new menu items and culinary programs
