Cluster Executive Chef - Carstens & ARCA We're looking for a Cluster Executive Chef to lead a diverse and high‑performing culinary operation across two prominent hotels. This role oversees a wide portfolio of F&B outlets. You will also guide breakfast operations for both hotels, Meetings & Events catering, Caffé, in‑room dining, and several additional F&B venues across Park Plaza Victoria Amsterdam and art'otel Amsterdam. What You'll do: - Develop, implement, and continuously refine menu concepts and culinary direction for two unique restaurant identities: Carstens and ARCA. - Lead R&D, menu tastings, seasonal rollouts, and special culinary events. - Ensure culinary concepts remain commercially viable, competitive, and aligned with brand positioning. - Oversee day‑to‑day kitchen operations across both outlets, ensuring consistency, quality, and compliance with health & safety standards. - Establish and maintain culinary SOPs, recipes, plating guides, and quality benchmarks. - Drive efficiency through cost control of food, labor, and kitchen resources. - Lead, inspire, and mentor kitchen teams across both venues. - Coach team members through performance reviews and career development plans. - Manage culinary budgeting, including food and labor costs. - Monitor revenue performance and adjust menus and pricing accordingly.
