About this role

Job summary

Ensuring the highest possible standard of food preparation and cooking.

To comply with national nutritional policies and food hygiene standards.

Providing food for patients, staff and the general public, as well as catering for special functions and buffets.

Main duties of the job

o Food preparation following all food safety legislative and departmental practices

o Food production following guidance from chefs to the highest possible standard for all users

o Strict observation of standardised recipes

o Complete daily and & cleaning duties according to cleaning schedules ensuring all C.O.S.H.H. regulations are followed

o Regular checking and completion of daily audit records (safety, cleaning, food hygiene)

o To be familiar with the security of the department and its contents.

o Report equipment defects to ensure remedial action is taken

o Responds to requests for further/out of hours food requirements for patients and dining rooms

o Service of food, including 'back bar' to customers within dining areas

Job description Job responsibilities

Ability to make judgements on routine matters of food production (recipe, ingredient or cooking method changes etc),

Chef/supervisor available for guidance if needed

Ensures food is handled safely meeting all legislative requirements

Ensures food served according to production and portion size requirements

Follows clean as you go principles and completes cleaning tasks as required

Uses own initiative in response to variations in work routine seeking support as necessary (production times etc)

Demonstrate flexibility in terms of work area, and shift pattern to meet the needs of the service

Ensure safe and correct storage of food products

Ensure safe storage of cleaning equipment and cleaning chemicals

Person Specification

Knowledge & Skills Essential

Qualified Chef with the associated skills to produce to a high standard all patient and staff menu items (including modified diets) as well as ad hoc function menus Demonstrates good and safe kitchen equipment use including knife handling skills Knowledge of the application of all regulatory and legislative requirements required to ensure a Healthy & Safe environment including: Hazzard Analysis Critical Control Points (HACCP); Safe Working; COSHH; Detailed Food Safety and Handling; Patient and Customer Care Patient and client interactions which portray a professional, supportive and caring service Good Food Allergens knowledge to ensure customer safety Good Food Nutritional knowledge to ensure customer safety

Desirable

Constructive team working and participation including multi disciplinary team relationships Personal organisation and time management

Experience Essential

Experience working in a kitchen/catering organisation Experience in Food Production

Desirable

Experience in recipe formulation and the associated allergen and nutritional needs

Qualifications Essential

City and Guilds 706/2 or NVQ 3 in Food Preparation or equivalent Basic numeracy and literacy skills Level 2 Food Hygiene Certificate

Nutrition and Allergen certificate
