Executive Chef (Victoria)
Lead the execution of Food strategy across 80+ venuesDrive culinary excellence and commercial performance in our Victorian portfolioAs the Executive Chef for Victoria, you'll be instrumental in contributing to our National Food Strategy and executing this in your state's venues.
In addition, you'll be responsible for maintaining a high standard of food quality and driving sales growth across the state.
You'll provide essential development and support to our venue Head Chefs, ensuring the quality of their food offer and prioritising key opportunities for food innovation and overall execution within Victoria.

Active involvement in defining venues food offer relevant to market and ALH standardsEnsure all business metrics are met including financial, safety, customer and team Work with the Operations Team to target and prioritise opportunities for the businessBusiness case recommendations for kitchen equipment changesSupport the Operations team in identifying and assisting in the succession planning for future leadersStrategic management of Apprentices and School Based Trainee programsWeekly auditing and continuous improvement in Food Safety processes at venue level as well as ongoing support and training in relevant food safety systemWork with venue teams in ensuring hygiene standards are met in terms of back of house operations, using safe food handling and storage practises and set cleaning schedules and proceduresEnsuring adherence to the food safety program/HACCP requirementsActive involvement with Venue and Operations teams on all seasonal menus changes to ensure they are market driven, competitively priced and sufficiently diverse within the portfolioWork with the Operations Team to develop peak trading day menuDevelop and implement, in conjunction with the Operations team, a state based calendar of food activities (footy specials, etc) with menu suggestionsVerify accuracy in allergen mapping and dietary balance of menus Now let’s talk about you:
Trade cooking qualifications and significant experience as a chefPrevious multi site experience including in a range of business settings (pubs, restaurants, functions etc)Certification in commercial food safety and HACCP principles.Cert IV Workplace training and assessment (or equivalent trainer accreditation)Knowledge of a wide range of cooking practices, food trends and presentation methods, including beyond those that apply to the venue/s menusKnowledge of safe, hygienic working practices and ability to instruct others in their requirementsIntermediate computer skillsStrong business acumen and demonstrated ability to achieve business development targetsTechnical food development experienceLeadership and team management skillsCurrent driver licence and ability to travel across Victoria as requiredThe benefits are good too!
