Exceptional Hospitality Starts with You Picture yourself brightening someone’s day. When you join our Hotels team, that’s exactly what you’ll do every time you come to work! You will assist in food preparation and cooking under the supervision of senior chefs. As Commis Chef (Vietnamese Cuisine), you’re not just preparing great tasting food items – you’re spreading the light and warmth of hospitality by delivering memorable experiences that make the stay for every guest.
Here’s what you’ll do during a typical day:
• Create authentic Vietnamese cuisine: Prepare and present high-quality Vietnamese dishes for our guests, following standard recipes, preparation methods, portion standards, and plating guidelines while maintaining authenticity, consistency, and presentation. • Support seamless kitchen operations: Work closely with the Sous Chef and Chef de Partie to ensure smooth daily kitchen operations, efficient preparation, and prompt service, particularly during busy periods and special events. • Deliver quality and consistency: Ensure all food preparation and restaurant set-ups meet the required standards, checking the quality, freshness, taste, presentation, and consistency of dishes and making adjustments when required. • Maintain exceptional food safety and hygiene: Follow HACCP requirements and established food safety, hygiene, sanitation, and hotel procedures at all times, ensuring a clean, safe, and well-organized working environment. • Work efficiently and responsibly: Use kitchen equipment, tools, machines, and ingredients appropriately while supporting inventory control and minimizing unnecessary waste to contribute to efficient and economical kitchen operations. • Stay prepared for daily business needs: Remain informed about hotel occupancy, restaurant activity, events, forecasts, and operational requirements, adapting preparation and priorities accordingly. Support off-site events and other operational assignments when required. • Contribute to an outstanding guest experience: Take guest feedback seriously and respond positively, using feedback as an opportunity to continuously improve food quality, presentation, and the overall dining experience. • Be a collaborative team member: Maintain a professional and positive attitude, communicate effectively, and contribute to strong teamwork to achieve kitchen and departmental goals. • Learn, develop, and adapt: Actively participate in training, remain open to new techniques and operational changes, and continuously develop your culinary knowledge and skills, particularly in Vietnamese cuisine. • Uphold hotel standards: Follow established hotel policies, kitchen procedures, team member guidelines, and departmental standards while carrying out all assigned duties efficiently and professionally.

• Minimum 1 year of experience as a Cook or Trainee in a 5-star hotel or high-standard restaurant. • Basic knowledge of Vietnamese cuisine. • Ability to remain calm and problem-solve under pressure. • Comfortable working in hot, humid, and noisy kitchen environments. • Strong teamwork and communication skills. • Willingness to learn and follow kitchen procedures and hygiene standards. • Knowledge in HACCP preferred.
• Good command in English, both verbal and written to meet business needs, preferred.
