Our Central Bakery is a 10,000 sq ft free standing, multifaceted, high production facility that produces all desserts and pastries for our two theme parks, Disneyland Hotel, and Park Banquets/Festivals team. Our Bakeshop at Disney’s Grand Californian Hotel & Spa supports our hotel banquet special events and award-winning fine dining restaurant, Napa Rose. Napa Rose has reopened with a bold new menu and a stunningly reimagined space, continuing its legacy of redefining fine dining in California. Basic Qualifications: • You must be at least 18 years of age to be considered for these roles • Passion for Culinary, Pastry & Baking, and delighting our Guests with food for an unforgettable Disney culinary experience! • Minimum of 2 years of experience in culinary field/restaurants, or a culinary degree and equivalent experience with a focus on high-volume production • Knowledge of culinary techniques and terminology • Ability to follow and understand recipes in a mass volume environment • Strong organizational skills, working with speed accuracy, and efficiency in the kitchen to multi-task and work in a high-volume environment • Strong listening skills and ability to take direction • Demonstrate a desire to provide excellent guest service and be part of a team • Must be flexible and able to work a variety of shifts, including days, nights, weekends, holidays, and special events Basic Qualifications for Pastry Roles:
• Strong piping skills • Uphold kitchen safety and sanitation, including temperature requirements • Good judgment of food quality and production, understand the impact of spoilage • Ability to assist Chef in preparing items for Guests with special dietary needs • Operate tools, measurements, ingredients, equipment, small wares, and cooking required for a bakery • Clean kitchen equipment and practice HACCP (Hazard Analysis and Critical Control Points) procedures
Preferred Qualifications: • Knowledge of pastry techniques, including scaling, mixing, proofing, baking, decorating, and finishing • Experience making mousse, pate-a-choux, and French macarons • Experience plating fine dining desserts • Experience with detailed cake decorating and show pieces, especially for weddings and special events • Completed culinary education program or equivalent leadership experience • Bilingual
Compensation Details: This posting is seeking candidates to fill multiple roles in California. Select benefits may be provided as part of the compensation package, such as medical, financial, and/or other benefits, dependent on the level and position offered. Additional Information: SCHEDULE AVAILABILITY Our Theme Parks and Resort Hotels operate 24 hours a day, 365 days a year, and some shifts may start as early as 5:00am while some may end as late as 3:00am, 4:00am, or 5:00am. Must be flexible and able to work a variety of shifts including days, nights, weekends, holidays, and special events.
