Medialuna Croissanterie is an artisan bakery specialising in freshly baked breads, croissants and viennoiserie. Our products are supplied to cafés and food businesses across Ireland. We are seeking an experienced Baker to join our production team. The successful candidate will be responsible for the preparation, production and baking of artisan bakery products, ensuring consistent quality and production standards. **Key Responsibilities** -Prepare and mix doughs according to recipes and production requirements. -Carry out fermentation, lamination, shaping and proofing processes. -Operate bakery ovens and monitor baking times and temperatures. -Prepare and produce bread, croissants and other bakery products. -Monitor product quality, consistency and appearance throughout production. -Follow daily production schedules and maintain efficient workflow. -Ensure compliance with HACCP, food safety and hygiene standards. -Maintain a clean, organised and safe production environment. -Assist with ingredient preparation, stock rotation and storage. **Requirements** -Minimum 2 years' professional experience as a Baker or in a similar bakery production role. -Proven experience in professional bakery production. -Practical experience with dough preparation, fermentation, shaping, proofing and baking. -Experience working with laminated dough is desirable. -Good knowledge of baking techniques and bakery production processes. -Knowledge of HACCP and food safety procedures. -Strong attention to detail and commitment to consistent product quality. -Ability to work efficiently in a fast-paced production environment. -Good communication and teamwork skills.
