Oldfield Club, located in Okatie, SC, is pleased to announce an excellent career opportunity for a full-time Beverage Manager! We are seeking a driven individual who is eager to learn, contribute, and grow within a fast-paced hospitality-focused property organization. Compensation:
$60,000.00 annually - based on experience
Summary: Seeking an accomplished and hospitality-driven Beverage Manager to lead and elevate the Club's beverage program as we continue to enhance the member experience throughout the Club.
This is an exciting opportunity for a beverage professional who understands that exceptional service goes far beyond what is in the glass. At Oldfield, beverage is an integral part of the overall dining and social experience — from a relaxed afternoon at the bar to a thoughtfully selected wine with dinner, a signature cocktail at a Club event, or a perfectly executed beverage experience on a busy game day.
The Beverage Manager will oversee the day-to-day beverage operation throughout the Club, including the Rookery Bar, Magnolia Room, and River Club, while supporting banquets, member events, special programs, and other Club beverage outlets as needed.
As Oldfield continues its ongoing clubhouse renovation and evolution of its Food and Beverage program, this position will play an important role in developing standards, systems, menus, training, and service culture that will define the next chapter of the Club.
THE OPPORTUNITY The Beverage Manager is responsible for the overall management, execution, and continued development of Oldfield's beverage program. This position combines operational leadership with creativity, financial accountability, and a genuine passion for hospitality.
The ideal candidate is equally comfortable discussing wine with a member, developing a seasonal cocktail menu, coaching a bartender through service, analyzing beverage costs, conducting an inventory, or stepping behind the bar when the operation needs leadership.
We are looking for someone who is engaged, polished, organized, approachable, and relentlessly focused on the member experience.
THE IDEAL CANDIDATE The ideal candidate is someone who believes that hospitality should feel personal.
You understand the difference between serving a drink and creating an experience. You know when to recommend a wine, when to make a classic cocktail, and when to simply remember how a member likes their favorite drink.
You are a leader who is comfortable setting high standards while remaining approachable and engaged with the team. You understand that profitability and hospitality are not competing priorities — they should work together.
Most importantly, you take pride in the details.
Schedule: Must be available to work evenings, weekends, holidays, and special events as required.
Key Responsibilities:
Beverage Program Leadership
• Lead the day-to-day beverage operations throughout the Club.
• Manage the popular Wine Club program.
• Establish and maintain consistently high standards for beverage quality, presentation, service, and hospitality.
• Develop and maintain beverage menus for the Rookery, Magnolia Room, banquets, and special events.
• Create seasonal and signature cocktail programs that reflect current trends while remaining appropriate for the Oldfield membership.
• Oversee the Club's wine program, including selections, pricing, inventory, presentation, and staff education.
• Develop creative beverage experiences, tastings, pairings, member events, and other programming.
• Ensure beverage offerings complement the culinary program and overall Club experience.
• Maintain awareness of emerging beverage trends and introduce appropriate concepts to the Club.
Operations and Financial Management
• Manage beverage purchasing, receiving, storage, organization, and inventory.
• Maintain appropriate beverage pars and ensure product availability without unnecessary overstock.
• Monitor beverage cost, pricing, margins, waste, breakage, and variance.
• Establish and maintain appropriate beverage pricing in partnership with the Director of Food and Beverage.
• Conduct regular inventory counts and investigate discrepancies.
• Maintain strong relationships with beverage distributors, suppliers, and representatives.
• Ensure all beverage areas are clean, organized, properly stocked, and professionally presented.
• Develop and maintain beverage standards, recipes, specifications, and operating procedures.
• Ensure compliance with all applicable South Carolina alcohol laws and Club policies.
Team Leadership and Development
• Recruit, train, coach, and develop bartenders and beverage service staff.
• Establish clear expectations for service, product knowledge, appearance, and professionalism.
• Conduct ongoing beverage education, including wine, spirits, beer, cocktails, responsible alcohol service, and service standards.
• Create a culture of accountability, teamwork, and genuine hospitality.
• Schedule and deploy beverage staff appropriately based on business levels and member activity.
• Lead pre-shift meetings and ongoing training initiatives.
• Provide regular feedback and performance coaching to beverage team members.
Member Experience
• Build positive and professional relationships with Club members and guests.
• Maintain a visible presence in the operation and actively engage with members.
• Recognize member preferences and use that knowledge to personalize service.
• Respond professionally to member feedback and service concerns.
• Anticipate member needs and consistently look for opportunities to exceed expectations.
• Support Club events, tournaments, social functions, wine dinners, holiday events, and other member experiences.
Collaboration
• Work closely with the Director of Food and Beverage and Food and Beverage Operations Manager to establish and execute the Club's overall beverage strategy.
• Partner with the Executive Chef and culinary leadership on wine pairings, cocktail programs, menus, and special events.
• Collaborate with the Restaurant Managers, Banquet team, and other Club departments to ensure seamless beverage service.
• Participate in planning and implementation related to the ongoing clubhouse renovation.
• Assist in developing beverage equipment, bar layouts, storage requirements, operating procedures, and service standards for renovated spaces.

Within the first year, the Beverage Manager will be expected to:
• Establish consistent beverage service standards across all outlets.
• Develop a compelling and profitable cocktail and wine program.
• Grow and strengthen the existing Wine Club program.
• Improve beverage product knowledge throughout the service team.
• Maintain strong beverage cost and inventory controls.
• Build productive supplier relationships.
• Create engaging beverage-focused member experiences.
• Develop a confident, knowledgeable, and service-oriented beverage team.
• Contribute meaningfully to the successful evolution of the Club's Food and Beverage program during the ongoing clubhouse renovation.
Minimum Qualifications:
• Minimum of 3–5 years of progressive beverage, bar, restaurant, hotel, resort, or private club management experience.
• Demonstrated experience managing beverage cost, inventory, purchasing, and pricing.
• Previous experience leading and developing a service team.
• Strong understanding of responsible alcohol service and applicable regulations.
• Excellent communication and interpersonal skills.
• Strong organizational and time-management abilities.
• Comfortable working in a high-touch hospitality environment.
Knowledge/Skill:
• Strong knowledge of wine, spirits, beer, cocktails, and current beverage trends.
• Proficiency with POS systems, inventory systems, Microsoft Office, and related technology.
Certificates/Licenses:
• Beverage certifications such as WSET, Court of Master Sommeliers, BarSmarts, or equivalent are preferred but not required.
