Front of House Manager
Moody Lagoon Restaurant · Benguela Cove Lagoon Wine Estate · Walker Bay, Hermanus
We are looking for someone to run the front of house at Moody Lagoon.
The setting is not a bad place to spend your working life. Moody Lagoon sits on the edge of the Bot River lagoon on a working wine estate, with the Atlantic on one side and the vineyards on the other. We serve around numerous covers a day, we pour our own wine, and about a quarter of what we do is events.
Here is the honest part. This job is two jobs. Half of it is service: leading a team through a busy lunch, looking after guests who have driven an hour to get here, and knowing our wines well enough to sell them properly. The other half is control: the till, the stock, the buying and the margins.
Most restaurants leave that second half to chance. We have just spent a month proving what it costs when you do. So we are looking for someone who can hold a section and read a spreadsheet, and who is not bored by either.
What You'll Be Doing
• The front of house and bar team: hiring, training, rostering, developing
• The guest experience, from a Tuesday lunch to a two hundred cover event
• Our point of sale. Not operating it, administering it: products, categories, costs and margins
• Monthly stock-takes and the variance behind them, beverage gross profit, and buying alongside our Head Chef
• Our wine on the floor. Lighthouse through to the Vinothèque library bottles
What You'll Need
• Three years or more running front of house somewhere busy, with real responsibility for people
• Genuine comfort with numbers. You should be able to work out a gross profit and spot when a figure looks wrong. If spreadsheets put you off, this is not your job and we would rather say so now
• Hands-on point of sale administration. We run iKentoo; Lightspeed, GAAP, Micros or Pilot experience transfers fine
• Real wine knowledge, or a real appetite to get there fast
• Your own transport. We are twenty minutes outside Hermanus and there is no bus
