Amongst our operations, we are home to signature restaurant Glass Brasserie, heritage listed Marble Bar and we are the leading destination for Conferences & Events with one of the largest conferencing spaces in Australia. The Director of Food & Beverage is responsible for leading the strategic and operational performance of the hotel's restaurants, bars, lounges, room service, executive lounge and event operations. Reporting to the Director of Operations, this role drives revenue growth, profitability, guest satisfaction and service excellence across all outlets. Working closely with the Executive Chef and Commercial team, you will oversee budgeting, workforce planning, compliance, quality assurance and business development initiatives. A key focus will be developing and inspiring high-performing teams through coaching, mentoring and succession planning, while ensuring Hilton brand standards, safety requirements and exceptional guest experiences are consistently delivered.
As Director of Food & Beverage, you will:
• Lead the operational performance of all Food & Beverage outlets, ensuring exceptional guest experiences and achievement of financial targets. • Develop and implement annual business, marketing and revenue strategies in partnership with key stakeholders. • Monitor financial performance including revenue, payroll, beverage costs, inventory control and forecasting to maximise profitability. • Ensure compliance with Hilton brand standards, food safety regulations, HACCP requirements, RSA legislation and workplace policies. • Drive guest satisfaction by actively reviewing feedback, resolving concerns and implementing continuous improvement initiatives. • Build, lead and develop a high-performing team through recruitment, coaching, mentoring, succession planning and performance management. • Partner with the Executive Chef to develop menus, pricing strategies and product offerings aligned with market trends and guest expectations. • Maintain strong relationships with suppliers, contractors and internal departments to ensure operational effectiveness. • Support the Commercial team with business development activities, client engagement and promotional initiatives. • Oversee workforce planning, payroll compliance, roster management and labour productivity. • Champion Hilton's Iconic Host culture, ESG initiatives and health and safety commitments. • Provide visible leadership within the operation, maintaining a strong presence during key service periods while fostering a culture of excellence, accountability and continuous growth.
To be successful in this role, you will bring significant leadership experience within a large-scale hotel, hospitality or premium Food & Beverage environment. You will be a strategic thinker with strong commercial acumen, coupled with a genuine passion for guest service and people development. Key requirements include:
• Proven experience leading multiple Food & Beverage outlets within a hotel or hospitality operation. • Demonstrated success in revenue growth, cost management, budgeting and financial forecasting. • Exceptional leadership, coaching and team development capabilities. • Strong stakeholder management skills with the ability to influence senior leaders, owners, suppliers and team members. • Sound understanding of food safety, liquor licensing, HACCP and workplace health and safety legislation. • Experience managing large and diverse teams, including recruitment, performance management and succession planning. • Excellent communication, presentation and interpersonal skills. • Strong analytical and problem-solving ability with a continuous improvement mindset. • Proficiency in hospitality management systems and Microsoft Office applications. • Valid NSW Responsible Service of Alcohol (RSA) certification. • Full Australian working rights. • A degree or diploma in Hospitality, Hotel Management, Business or a related discipline will be highly regarded.
