• Assist the Chef de Cuisine in developing and executing authentic dim sum and Disney-themed character dim sum offerings, ensuring exceptional quality, creativity, and consistency. • Oversee daily dim sum kitchen operations, including food preparation, production, service execution, workforce scheduling, and workflow management. • Ensure compliance with all food safety, hygiene, sanitation, HACCP, and operational standards while maintaining the highest levels of food quality and presentation. • Monitor inventory, support purchasing activities, and manage food costs through effective product utilization and waste control. • Train, coach, and develop culinary Cast Members, fostering a culture of teamwork, operational excellence, and continuous improvement. • Partner with cross-functional teams to deliver successful events, VIP experiences, and outstanding guest satisfaction, including the prompt resolution of guest feedback and concerns. • Drive menu innovation, operational efficiency, and the safe maintenance and operation of kitchen equipment.
Job Requirements:
• Minimum 10 years of culinary experience in reputable hotels, Chinese restaurants, or established restaurant groups, with extensive expertise in dim sum cuisine. • Proven leadership experience in managing, motivating, and developing culinary teams within a high-volume operation. • Strong knowledge of Chinese culinary techniques, menu development, food trends, HACCP principles, food safety regulations, and quality assurance standards. • Creative, results-oriented, and guest-focused, with a passion for culinary excellence, innovation, and continuous improvement. • Strong communication, interpersonal, organizational, and problem-solving skills, with excellent attention to detail. • Ability to perform effectively under pressure, adapt to changing operational needs, and maintain high standards of quality and efficiency. • Strong financial acumen, including food cost control, waste management, and labor productivity. • Passion for coaching and developing culinary talent. • Proficiency in Microsoft Office applications, including Excel, Word, Outlook, and PowerPoint. • Fluency in Cantonese is required; proficiency in English and Mandarin is an advantage.
