The Graveyard Steward II
Executes heavy deep cleaning, degreasing, sanitizing, and basic equipment upkeep across all hotel kitchens, food prep areas, banquet facilities, employee cafeteria, and restaurants during the overnight shift. This role is essential for disassembling, scrubbing, and sanitizing cooking equipment and work zones, ensuring all culinary and banquet operations are spotless, compliant, and fully prepped for the morning shift.
Key Responsibilities
Cooking Equipment Deep Cleaning & Maintenance:
• Perform heavy degreasing, scrubbing, and sanitizing of ovens, stovetops, grills, flattops, and deep fryers across all kitchens and banquet production areas.
• Change, filter, and properly dispose of fryer oil as scheduled or needed.
• Deep clean kitchen exhaust hoods and grease filters to prevent grease buildup.
• Thoroughly clean and sanitize stationary kettles, large prep pots, and production vessels.
• Safely handle and apply approved industrial degreasers and sanitizing agents according to hotel safety standards.
Facility, Banquet, Restaurant & Cafeteria Deep Cleaning:
• Conduct deep cleaning and complete sanitation of banquet staging spaces, the employee cafeteria, and assigned restaurant kitchens.
• Heavy scrub and deck-brush kitchen floors, baseboards, floor drains, walls, and stainless steel prep tables.
• Ensure walk-in coolers, reach-in refrigerators, and staging areas are fully sanitized, organized, and left with dry, hazard-free floors.
Heavy Cookware Washing & Shift Turnaround:
• Wash and sanitize heavy production pots, sheet pans, and large cooking containers remaining from evening restaurant and banquet closes.
• Sort and restock all clean items in designated storage racks for the incoming morning culinary team.
Waste Management & Safety Compliance:
• Empty, scrub, and sanitize trash cans across kitchens, banquet zones, and service areas, replacing liners as needed.
• Keep all service hallways and egress paths clean, dry, and free of slip/trip hazards.
• Strictly adhere to occupational safety guidelines, health codes (HACCP / ServSafe), and mandatory Personal Protective Equipment (PPE) policies, including non-slip shoes, chemical-resistant gloves, aprons, and eye protection.
Qualifications & Requirements:
Experience: Extensive experience is not required (previous background in overnight cleaning, kitchen maintenance, stewarding, or heavy facility sanitation is a plus). Comprehensive on-the-job training is provided.
Knowledge: Basic knowledge of kitchen cleaning chemicals and safety practices (further reinforced during onboarding).
Skills & Abilities:
• Strong self-discipline, reliability, punctuality, and the ability to work independently with minimal overnight supervision.
• High attention to detail and pride in performing thorough deep-cleaning tasks.
• Strong physical stamina for heavy labor.
Availability: Dedicated full-time availability to work fixed overnight/graveyard shifts, including weekends and holidays.
Physical Requirements: Ability to remain on your feet moving, bending, scrubbing, and lifting continuously throughout the shift, with the capacity to lift up to 45–50 lbs regularly.
