You are comfortable with laminating and making viennoiseries/pastries. We bake in a deck oven. Baking of a small variety of petits fours (in small quantities) Vous maitrisez la technique de fermentation au levain, le pesage, le pétrissage, le faconnage à la main Vous êtes à l'aise pour le tourage et la réalisation des viennoiseries. La cuisson est faite dans un four a sol. Réalisation d'une petite gamme de petits fours en faible quantité.
